Did you know the original “Baby Swiss” cheese was born in Ohio’s Amish Country? It’s true. This smoother, milder Swiss with its smaller “eyes” was created by master cheese-maker Alfred Guggisberg, who began his career at age 16 in the high pastures of the Swiss Alps. Guggisberg Cheese still uses the same recipe to make this wonderful and versatile cheese today.
Swiss Cheese & Bacon Quiche
1 1/4 cup Bisquick
1/4 cup butter or margarine, softened
2 Tablespoons boiling water
1 cup Guggisberg Baby Swiss cheese, shredded
1 - 6 oz package Canadian style bacon, chopped
4 medium green onions, sliced (1/4 cup)
1 1/2 cups Half & Half
3 eggs
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
Heat oven to 400º. Grease 9" pie plate. Stir Bisquick & butter until blended. Add boiling water, stir vigorously until soft dough forms. Press dough on bottom & up sides of pie plate forming edge on rim of plate. Sprinkle Guggisberg Swiss cheese, bacon & onions over crust. Beat half & half with eggs. Stir in salt & pepper. Pour into crust. Bake 35 - 40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
